CREAM OF ASPARAGUS SOUP

2 Bunches of Fresh Asparagus
6 Cups of Stock - Vegetable or Chicken
1/2 Cup Chopped Onion
1/2 Cup Chopped Celery
3 Tbsp Butter
3 Tbsp Flour
1/2 Cup Cream

Salt, Pepper & Paprika To Taste
Wash and remove tips from asparagus. Steam tips in a small amount of water until tender; set aside. Cut stalks into pieces and place in a saucepan. Add stock, onion and celery to the stalks, cover and simmer 30 minutes. Push through a sieve. In saucepan, melt butter, stir in flour until smooth, slowly add cream while stirring. Add to asparagus stock then heat in a double boiler. Add tips when hot. Season with salt, pepper and paprika. "Tis The Season".
